Today, I want some healthy Chocolate brownies. So I remember the zucchini easy recipe I mostly make when I want to eat more delicious and dark chocolaty, so today I’ll make a very delicious and yummy soft and very smooth Zucchini Brownies

You won’t taste the zucchini in this easy zucchini brownie recipe. It melts into the rich chocolate batter, making them incredibly gooey and chewy.  As soon as I’m done writing this post, I’m going to the kitchen and making some more zucchini brownies. It’s impossible for me to sit here, staring at pictures of their sparkly tops and gooey, Chocolatey midsections, and NOT start to crave them. Tell me, do they tempt you, too?

 What’s really fun about this zucchini brownie recipe is that even though it has 2 whole cups of zucchini, the zucchini is barely noticeable. It melts into the rich chocolate batter, giving the brownies an incredibly chewy and gooey texture. I admit they are slightly sweeter than the average homemade brownie, but overall I think they are just as good.

Zucchini Brownies

  1. 5 tbsp water  
  2. ½ tsp sea salt  
  3. 1 tsp baking powder  
  4. 1 tbsp. Vanilla extract  
  5. 2 tbsp ground flaxseed  
  6. 1 cup granulated sugar 
  7. ½ cup melted coconut oil  
  8.  ⅔ Cup cocoa powder sifted  
  9.  Sea salt flakes, optional to dust on top
  10. 1¼ cup all-purpose flour, spoonfuls and leveled
  11. ½ cup dark chocolate chips, plus more for garnish   
  12. 2 cups shredded zucchini, without draining or pressing

Zucchini, of course, is the main ingredient of this amazing recipe. You’ll shred it on the large holes of a box grater. Don’t press or squeeze out any of the moisture. We want all of it to go into the brownies. It makes our brownies very healthy and tasty.

I always use dark chips because it’s my favorite and give you an amazing taste. Chocolate chips I like to use dark chocolate chips to intensify the brownies’ chocolate flavor, but milk or semisweet chocolate chips will work here too.

You’ll mix fine sea salt into the batter. Top the brownies with flaky sea salt to make the chocolate flavor pop and make our recipe balance all the tastes.

 

How to make it

These zucchini brownies are very simple to make and easily ready in just some minutes.

 Here I told you about making perfect and soft zucchini brownies. 

 

First Step

First, you can make the flax egg. Mix together the water and flaxseed in a small bowl. And then set them aside for 5 minutes to thicken the mixture. Then, we combine the all dry ingredients. Now is the time to whisk together and dry the flour, sugar, cocoa powder, baking powder, and salt add in a small bowl and combine very well.

 

Second Step

Then the next step, mix together the all wet ingredients. Take a large bowl and whisk together the coconut oil, flaxseed mixture, and vanilla, Beat vigorously to incorporate the flax with the other ingredients. 

 

Fourth Step

Then important time to combine both wet and dry ingredients and stir them together. Add the dry ingredients to the zucchini mixture and also stir to incorporate them.

 

Fifth Step

Check the batter if you feel it looks very dry, that’s ok. When your mixture mixes the all ingredients together, then let the batter rest for 1 minute to set its proper shape.

 

Sixth Step

After 1 minute, stir again, and the batter will be smooth, thick, and fudge. Mix until no dry patches remain. To make your Zucchini brownies more delicious and very Chocolatey, add dark choco chips to make the flavor very yummy. 

 

Seven Step

Now it’s time to bake our recipe. Transfer the batter to the pan lined with parchment paper. Use a spatula to smooth the top, then sprinkle with more chocolate chips. Yum! Bake at 325 °F until brownies are set in the center, 45 to 50 minutes. A toothpick is inserted in the center, if it comes out clean it’s totally baked.

Allow cooling in the pan for at least an hour. Slice and enjoy!

 

Best Tips to make

Mix batter in two steps. Since much of the moisture in this recipe comes from the zucchini, the dough will be very dry when you first mix it. Stir as best you can, then let sit for 1 minute. This time gives the zucchini a chance to release some of their moisture into the batter. After a minute, you should be able to mix the batter with no problem.

Don’t be tempted to stir constantly, instead take a minute to let the batter rest. If you do, you’ll mix it too much, which will make the brownies tough.  Expect the brownie batter to be thick. It will be spreadable, but not pourable. Don’t worry, it must be thick!  Let them cool in the pan for at least an hour.

Like regular fudge brownies, these zucchini brownies need time to set up after they come out of the oven. As they cool, they become wetter, stickier, and more cohesive. Cut them too soon and they will crumble.
