Enchiladas Ingredients:

Here are the ingredients available you need to make this amazing and very cheese-crunchy Vegetarian Black Bean Enchiladas recipe.

Filling:

  1. ⅓ Cup chopped scallions
  2. 2 cups cubed butternut squash
  3. 2 teaspoons extra-virgin olive oil
  4. 1 cup cooked real black beans, drained 
  5. Sea salt and freshly ground black pepper

Sauce:

  1. 1 garlic clove, minced
  2. 2 teaspoons virgin olive oil
  3. 1 (14-ounce) can of tomato sauce
  4. Sea salt and freshly ground black pepper
  5. 3 tablespoons adobo sauce from canned chipotle adobo sauce

For the enchilada assembly:

  1. 1 jalapeño, sliced
  2. 2 cups grated white cheddar cheese
  3. 6-8 corn tortillas or homemade tortillas

Serve with:

  1. Avocado slices
  2. Cilantro, for garnish
  3. Lime slices, on the side
