Best Citrus Salad with Fennel & Avocado

This recipe is still my favorite citrus salad! It uses a blend of fruits to showcase the best of the season and is packed with crunchy, aromatic, salty, and bitter elements to accentuate the sweet and juicy citrus.

It would make a spectacular side dish for any dinner party or brunch, but if you’re anything like me, you’ll want to eat this salad all the time. Pair it with a scoop of spelled or top it with a handful of crispy roasted chickpeas and call it a meal. I hope you like it as much as I do!

 

Ingredients

Citrus Salad Recipe Ingredients When I add citrus to a salad, you can bet the fennel, avocado, and mint won’t be outdone. Each of these ingredients brings out the sweet, juicy fruit differently. You’ll find them all here, along with a few other key ingredients:

 

  • 2 tbsp pine nuts  
  • Lemon dressing
  • 5 radicchio leaves,   
  • 1 clove garlic, grated 
  • ¼ cup pecorino flakes  
  • ¼ cup fresh mint leaves 
  • 2 tbsp juice of the lemon
  • sliced 1 avocado, sliced ​​ 
  • 1 fennel, very thinly sliced
  • 2 cup of extra virgin olive oil ​​
  • sliced ​​1 small pink grapefruit,   
  • 1 fennel, quartered and roasted  
  • torn 3 satsumas or 2 small oranges
  • ½ tsp Dijon mustard ¼ tsp sea salt
  • Sea salt and freshly ground black pepper

Citrus of course! It is the main ingredient of this recipe. It couldn’t be a citrus salad without a good blend of citrus. I used satsumas and grapefruit, but blood oranges, tangerines, and tangelos would have been great too. It gives a yummy and unique taste to our recipe.

Fennel

 Fennel 2 ways, I thinly slice a bulb and leave it raw to crisp up. Then I cut another into wedges and roast it. It comes out of the oven with a silky texture and an aromatic, caramelized flavor that is delicious in this citrus salad. It makes an aromatic crunchy flavor to make our Citrus Salad with Fennel & Avocado fresher and lighter.

 Radicchio’s abundant bitter leaves balance out the sweetness of the fruit and resist all the juices in this salad.

Avocado, Its creamy texture, is excellent with the other juicy and crunchy elements here. It’s almost the best part of the salad, it’s really amazing. Its sweet and smooth texture is delicious.

Pecorino Flakes are a salty contrast to the sweet fruit!  Pine nuts – For sweet treats! Here too would be great nuggets, chopped almonds, or chopped walnuts. 

Fresh Mint

 Fresh Mint is the icing on the cake! Makes this salad fresh and light. Try using fresh thyme leaves for a fun twist.

How to make it

 

First Step

Let’s make our yummy and delicious recipe. To assemble the salad, layering the radicchio, roasted fennel, and half of the raw fennel and citrus wedges on a serving platter.

Second Step

Drizzle with sauce and season with salt and pepper. Layer on the rest of the fennel and the citrus, and top them with avocado, mint, cheese, and pine nuts. Arrange the remaining fennel and citrus on top and garnish with avocado, mint, cheese, and pine nuts.

Third Step

 Add more seasoning, salt, and pepper. You can also add your favorite fruits and nuts in small pieces and serve this yummy and impressive salad.  

Citrus salad tips  

Leave the marrow aside. This salad should be all citrus, not marrow. Cutting the peel and white skin from each citrus wedge is crucial to show off the fruit’s sweet flavor and juicy texture. I also like to remove any exposed pieces of the skin membrane that separates the citrus segments. You can eat this yummy, tasty recipe any meal of the day. Its mint flavor and balanced taste give you an excellent and refreshing feeling.

 This gorgeous salad would be great for entertaining! To make ahead, blend the vinaigrette, mince, roast the fennel, and slice the citrus a day ahead. Assemble the salad just before it’s ready to eat.  Make it vegan. Skip the cheese and use a dollop of diced capers or Kalamata olives instead.
